My experiments in cooking-1 Dahi-Vada (without chutney)

The name Dahi vada itself is enough to bring water in the mouth. Usually dahi vadas are made of lentils (urad dal) deep fried in oil. For a healthier version I used moong dal instead of urad dal because it is easy to digest. Instead of deep frying the vadas I made the them in the microwave oven. Cooking them in the microwave is easier, healthier and saves a lot of time.

Non-fried dahi vada

Topped with cumin powder and pomegranate seeds.

Ingredients
Vadas:

• 1 cup moong dal
• 1/4 cup urad dal for taste
• 1 green chili
• 1/2 tsp unflavored fruit salt
• 3 cups chat masala water for soaking vadas
• Salt and sugar to taste
• Oil for greasing 

Dahi:

• 3 cups yogurt
• Black salt to taste
• sugar to taste
• 1tsp roasted cumin(jeera) seeds powder

Preparation

Vada:

1. Soak the moong dal and urad dal together in water overnight or in warm water for at least 4 hours.
2. Drain out most of the water and grind it to a smooth paste in a blender along with the chilies.
3. Add the fruit salt to the mixture and mix well.
4. Pour 2 tbsp of the batter in to 6 small greased microwave safe bowl or you can use egg poacher(I have used it and it works really well) and microwave it for 2 minutes and 30 seconds.
5. Remove and allow it to cool completely. Once cool, remove the vadas from the mould.
6. Soak the vadas in chat masala water for a few minute,until they are soft.
7. Drain and squeeze out any excess water and place on a serving plate.

Dahi:

1. Add black salt, sugar and roasted cumin seeds powder to the yogurt and whisk it.

Dahi Vadas:

1. Pour the yogurt over the soaked vadas.
2. Garnish it with the chili powder, roasted cumin seeds powder, pomegranate seeds and chopped coriander leaves.
3. Serve immediately.
4. Don't let it soak for a longer time or overnight. It won't taste that good the next day.     "njoy!!"

केक कलैक्शन

मुझे मालूम है आपको मेरे इस पोस्ट का शीर्षक कुछ अटपटा सा लग रहा होगा। अभी आप यह सोच रहे होंगे की यह केक कलैक्शन क्या बला है और केक को कोई कलेक्ट कर कैसे सकता है? आपने कॉइन,करेंसी , डाक टिकट इत्यादि कलैक्शन सुने होंगे लेकिन केक कलैक्शन नहीं। चलिए अब मैं बता ही देती हूँ। दरअसल बचपन से मुझे भी सबकी तरह अपने जन्मदिन का इंतज़ार रहता है। बचपन में भी मेरा जन्मदिन बड़ी धूम धाम से मनाया जाता था और आज भी। तब मेरे माँ-बाबा मेरा जन्मदिन मानते थे और अभी मेरा पति। इज़्ज़त देते हुए लिखती "मेरे पति" तो लगता एक से ज्यादा हैं। :)

मैं केक का संग्रह अपने द्वारा खींचे गए केक के चित्रों के रूप में करती हूँ। मेरे जन्मदिन में मुझे सबसे ज्यादा ख़ुशी केक काटने से ही मिलती है। कुछ और हो या न हो केक का होना ज़रूरी है। नीचे कुछ तस्वीरें है जो मैं आप लोगों के साथ बाँटना चाहती हूँ।

तिथि वाला केक।

अभी आप सोच रहे होंगे ये तिथि वाला केक क्या है? हमारे यहाँ पहले से ही जिस तिथि में मैं पैदा हुई थी उसी दिन हर साल मेरा जन्मदिन मनाया जाता है। पर मुझे ये तिथि कभी समझ नहीं आती थी।मैं अपना जन्मदिन उस एक तारीख को मनाना चाहती थी जब मैं पैदा हुई पर बड़ों की दुनिया मैं बच्चों की चलती कहाँ है। मेरी किसी भी दोस्त को मेरा जन्मदिन याद नहीं रहता था क्योँकि तिथि तो ऊपर नीचे होते रहती है।शादी के बाद भी मेरी माँ ने जब मुझे जन्मदिन की बधाइयाँ दीं तब मुझे मेरा तिथि वाला जन्मदिन याद आया।फिर क्या था जैसे ही पति देव को पता चला उन्होंने बड़ी धूमधाम से मेरा जन्मदिन मनाया। अब यह तो पक्का था जब तारीख वाला जन्मदिन आएगा तो वह ज़ोर शोर से मनाया जायेगा पर उस दिन पति देव घर पर थोड़ा लेट आए और बोले उन्हें एग्गलेस केक नहीं मिला।कुछ तो था उनके हाथ में जो मुझे दिख नहीं रहा था।शायद वो मुझसे छिपाने की कोशिश कर रहे थे। मुझे पता था केक तो लाये होंगे पर अचानक से उन्होंने मुझे मफ़्फ़िन्स का पूरा एक पैकेट पकड़ा दिया और बोले आज इसी से काम चलाना  पड़ेगा। अभी भी कही एक उम्मीद तो थी।लग रहा था शायद यह सब मज़ाक ही है पर जब उन्होंने उन मफ़्फ़िन्स पर कैंडल लगाने शुरू किये तो विश्वास हो गया था कि यही काटने होंगे। :(

  बाद में जब उनके फ्रेंड्स केक लेकर आये तो पता चला ये सब मज़ाक था :)असली केक तो ये था ---

वह दिन बहुत ख़ास बनाया गया मेरे लिए।रात के भोजन के लिए हम सभी लोग ओलिव गार्डन गए। बहुत सारे उपहार मिले।बचपन से आज तक हर साल के नाम पर एक गिफ्ट मिला। तब मैंने मन ही मन सोचा काश मैं ४० साल की होती तो ४० गिफ्ट तो पक्के थे। :)

4th of July in Vegas... :)

I had heard a lot about the 4th of July firework display and I always wanted to see it. Last year on 4th of July we didn't go out to see any fireworks in the city as we had to stay at home due to rain and thunder storms. We spent the whole day at home watching movies while eating Maggie and different kinds of pakodas like potato, spinach, onion, paneer and egg. This year we went to Las Vegas on 4th of July. It was a memorable trip.

I was looking forward to the firework show in Vegas but what I actually saw and experienced was way more than just a firework display. With some of the world's most famous casinos, Vegas is a heaven for gamblers from all over the world. However there is a lot to do and see in Vegas even if one is not a gambler. The city comes to life during the night. The lights, the buildings, the glamour, the fun atmosphere and thousands of tourists from across the world is a feast for the eyes. It is the kind of America that they show on TV. Just walking down the Strip with your loved one by your side is a pleasure in itself. We spent a lot of time inside the many casinos and also strolled on The Strip at night.

This fountain show was pretty amazing. I loved the way they choreographed the dancing water with the soulful music. I read somewhere that the music is not synchronized but personally I don't think so. At night it is very beautiful as the water is lit up. I had also tried to make its video but I could not capture the awesomeness of it. A good quality video of the same can be found here.

The lights and the fountain waters move with the beats of the music.

It lasts about 15-20 minutes.

Another thing that captured my eye was The Volcano show. It is on the strip right in front of the Mirage hotel. The fire and the booming gun sounds are well synchronized with the music and one can feel the heat even at a distance. We were lucky that we came on time and found the right spot to see the whole spectacle.

It starts at 8PM every night and goes off every hour until midnight.

I would totally recommend the place. Viva Las Vegas!!
